- Prepare the Kamado BONO grill for direct cooking: light the charcoal, place the stainless steel grates, and wait until the temperature reaches 180 degrees Celsius. Close the top and bottom vents to maintain a consistent temperature.
- Pour oil into a pot and add the beef cut into strips. Sear the meat, then add onion rings, followed by diced fresh tomatoes and canned tomatoes.
- Season with spices and garlic, and mix well.
- Add soaked chickpeas, pour in the broth, and stew for about 1 hour.
