Monkey Bread with Spiced Butter

Ingredients

  • 300 ml milk
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 egg yolks
  • 50 g butter
  • 500 g wheat flour
  • 8 g dry yeast
  • For the spiced butter:
  • 70 g butter
  • A handful of fresh chopped herbs
  • 2-3 garlic cloves
  • Sesame seeds
  • A pinch of salt

Recipe

  1. Prepare the Kamado BONO grill for indirect cooking: light the charcoal, place the system with the deflector, put the baking stone on the grill grate, and wait until the temperature reaches 180°C. Close the top and bottom air vents to maintain an even temperature.
  2. Mix the yeast with sugar and lukewarm milk. Beat the egg yolks with the butter, then add the activated yeast mixture and gradually add the flour. Knead the dough lightly and leave it covered in a warm place until it doubles in size.
  3. Meanwhile, prepare the spiced butter by melting the butter and mixing it with fresh herbs, minced garlic, sesame seeds, and a pinch of salt.
  4. Form small dough balls, spreading layers with the spiced butter. Place them in the Grand Feu pot and let them rest for 20 minutes. Put the pot into the grill and bake indirectly for 15-20 minutes.
  5. Once baked, brush the Monkey Bread with the remaining spiced butter.
